What You'll Need:

-1/2 cup cornstarch -1/2 teaspoon baking powder -1/4 teaspoon salt -1 egg white -1 tablespoon soy sauce -1 tablespoon rice vinegar -3 tablespoons vegetable oil, divided -1 pound cod fillets, cut into 1-inch pieces -1/2 cup sugar -2 tablespoons water -1/4 teaspoon red pepper flakes -6 green onions, thinly sliced on the diagonal Directions:

In a shallow dish, whisk together the cornstarch, baking powder and salt. In another shallow dish, whisk together the egg white, soy sauce and rice vinegar. Dip the cod pieces in the cornstarch mixture, then the egg white mixture. In a large skillet or wok over medium heat, heat 2 tablespoons of the oil until hot. Add half of the cod pieces and cook for 2 minutes or until golden brown and cooked through. Remove from the skillet and set aside. Heat the remaining 1 tablespoon oil and cook the remaining cod pieces for 2 minutes or until golden brown and cooked through. Remove from the skillet and set aside.     In a small saucepan over medium heat, combine the sugar and water. Cook for 3 minutes or until bubbly. Add the red pepper flakes and green onions. Cook for 1 minute or until heated through. Serve over the fried fish.
